Chia fresca is lemonade with a little something extra: chia seeds that plump up right in the glass. Three ingredients, three minutes of work, and the sweetener is up to you.

Chia fresca, also called chia lemonade or agua de chia, is about as easy as drinks get: cold water, fresh lemon juice, and a spoonful of chia seeds. Give it a few minutes and the seeds plump up, giving the lemonade a little body. It’s refreshing, and the fiber makes it more filling than a regular glass of lemonade.
This recipe grew out of my love for aguas frescas, which I tried by the dozen when I visited Mexico. Chia fresca is the simplest one in the family. No blender, no straining, just stir and wait.
If you have a bag of chia seeds sitting in the pantry, this is a great way to use them up. For a spoonable chia recipe, try my matcha chia pudding.
Chia Fresca at a Glance
- What it is: A Mexican-style agua fresca made with cold water, fresh lemon juice, chia seeds, and optional sweetener.
- Why it works: Chia seeds absorb water and swell, which gives the lemonade body. Fresh lemon keeps it bright, and you sweeten to taste.
- Time: 3 minutes of prep, plus 10 minutes for the seeds to plump.
- Make-ahead: Mix a pitcher ahead and keep it in the fridge for up to 2 to 3 days. Stir before pouring, since the seeds settle.
- Swaps: Lime instead of lemon (see the lime and mint variation). Any of the four sweeteners, or none.

Why You’ll Love This Chia Lemonade
- Three ingredients, no special equipment. Just a pitcher or a large mason jar.
- You control the sweetness. Use sugar, honey, agave, or stevia, or skip it entirely.
- Light and filling. Each unsweetened serving is about 36 calories with 2 grams of fiber.
- Easy to scale. Double it for a party pitcher; the ratio stays the same.
What Is Chia Fresca?
Chia fresca is a type of agua fresca, the light “fresh water” drinks popular across Mexico and Central America. It’s made by stirring chia seeds into water, usually with citrus and a little sweetener.
Chia (Salvia hispanica) is native to the mountainous regions of western and central Mexico and was an important crop long before the Spanish arrived. The seeds are loaded with fiber, healthy fats (including plant-based omega-3s), and plant-based protein. In liquid, they absorb water and swell, which is why a glass of chia fresca feels more filling than plain lemonade.
Ingredients You’ll Need

- Cold filtered water: Starting cold means it’s ready to drink as soon as the seeds plump.
- Fresh lemon juice: About one large lemon gives you ¼ cup.
- Chia seeds: Black or white both work.
- Sweetener (optional): Sugar, honey, agave, or liquid stevia. Leave it out if you like it plain.
How to Make Chia Fresca
1. Juice the lemon. You need ¼ cup, about one large lemon. Fresh juice is what makes this taste like real lemonade.
2. Combine everything in a pitcher or large mason jar. Add the cold water, lemon juice, chia seeds, and sweetener if using. There’s no need to soak the chia seeds first; they hydrate right in the lemonade.
3. Stir and let it rest. Stir well, then let it sit 5 to 10 minutes while the seeds plump up. Stir again after a minute or two to break up any clumps.

4. Stir again and serve. The seeds settle to the bottom as it sits, so give it a good stir right before pouring. Serve chilled or over ice.

Jamie’s Tip
Tips for the Best Chia Fresca
- Taste before you sweeten. Lemons vary in tartness, so add sweetener a little at a time.
- Use cold water. It’s ready to drink as soon as the seeds plump.
- Stir before every pour. The seeds sink, and you want some in every glass.
- Freeze a portion into ice cubes to keep a pitcher cold without watering it down.
Chia Fresca Variations
Lemon is the classic, but any fruit works.
- Watermelon chia fresca: Blend watermelon and strain out the pulp. Chill the juice, then add chia seeds.
- Strawberry chia fresca: Blend strawberries with water, strain out the pulp, then add chia.
- Cucumber chia fresca: Add thin cucumber slices to a pitcher of water to infuse it, then stir in chia.
- Lime and mint chia fresca: Muddle lime and mint, then add chilled water and chia seeds.
- Peach chia fresca: Stir chia seeds into peach agua fresca.

Storage
Store chia fresca in a covered pitcher or jar in the fridge for up to 2 to 3 days. Stir well before serving.
