Cuisine: Mexican
Servings: 2 people
Calories: 36kcal
- 3 cups cold filtered water
- ¼ cup lemon juice about 1 large lemon
- 1 Tablespoon chia seeds
Optional Sweetener - choose ONE of the following:
Add the water, lemon juice, chia seeds, and sweetener (if using) to a small pitcher or large mason jar. Stir well.
Let sit 5 to 10 minutes, until the chia seeds plump up. Stir again after a minute or two to break up any clumps.
Stir again right before serving, since the seeds settle. Serve chilled or over ice.
- Sweetener: Taste before adding, since lemons vary in tartness. Start with less and add more as needed, or skip it entirely.
-
Make ahead and storage: Refrigerate in a covered pitcher or jar for up to 2 to 3 days. Stir well before serving.
-
Scaling: For a party pitcher, double it: 6 cups water, ½ cup lemon juice, and 2 tablespoons chia seeds.
-
Variations: Swap lemon for lime and add muddled mint, or stir chia into watermelon or cucumber agua fresca. See the post for details.
