This matcha chia pudding takes 5 minutes of hands-on time and just 4 ingredients: chia seeds, unsweetened almond or coconut milk, matcha, and liquid stevia. It’s keto and vegan at about 3 grams net carbs per serving, and you can let it set overnight for a grab-and-go breakfast.

This keto matcha chia pudding is my favorite way to put matcha into a no-cook breakfast. It’s made with four simple ingredients, each serving has about 3 grams of net carbs, and you can mix it the night before so it’s ready when you wake up.
I first made it when I started waking up at 7 am. I’d been a lifelong night owl who happily skipped breakfast, but getting up early meant I was starving by 10 am. I needed something I didn’t have to cook, and this chia pudding kept me full a lot longer than I expected.

Why You’ll Love This Matcha Chia Pudding
It’s keto and vegan. Chia seeds, unsweetened plant milk, matcha, and stevia keep the carbs low and the recipe fully plant-based.
Mixing takes 5 minutes. You whisk, cover, and let the chia seeds do the rest in the fridge.
It works as a make-ahead breakfast. Mix it the night before, and just add toppings in the morning. If you like planning breakfast ahead, my baked French toast casserole is another good one to prep the night before.
The matcha flavor is real. It tastes earthy and slightly bitter, a little like dark chocolate, balanced by just enough sweetness.

What is Matcha and How to Use it?
What is matcha?
Matcha is green tea leaves ground into a fine powder. The stems and veins are removed during processing, which gives it a silky texture. It tastes like green tea, but with a stronger herbal, earthy flavor.
Matcha is one of my favorite ingredients in Japanese-style desserts and drinks. My matcha cake is a light, fluffy green tea sponge, and my strawberry matcha latte layers it over strawberries and milk.
Matcha can be used in so many different ways, but my favorite way is to use it in desserts. Tip: Use matcha wherever you would use cacao powder. You can use it in baking, mousses, custards, cakes, and even frostings. It makes for really amazing desserts!
Ingredients for Keto Matcha Chia Pudding

Chia seeds: These are loaded with fiber, healthy fats, and plant-based protein, which all help you feel full.
Unsweetened almond milk or coconut milk: Use any non-dairy milk with no added sugar. Lite coconut milk works too, and full-fat coconut milk makes a richer, creamier pudding. I stick to unsweetened plant milk because dairy milk contains natural milk sugar (lactose), which adds carbs.
Matcha powder: This gives the pudding its color and an earthy, slightly bitter flavor, which I’ve found oddly soothing. Matcha also contains caffeine, so it’s a gentle way to start the morning.
Liquid stevia: Add it a few drops at a time, tasting as you go, since sweetness varies by brand.
Toppings: Use unsweetened coconut flakes to keep the pudding keto. They add a hint of natural sweetness, along with fat and fiber. A handful of mixed berries adds fresh flavor and color.
Tips for the Best Chia Pudding

Get rid of the clumps. Matcha clumps easily, so whisk thoroughly, or shake everything in a sealed jar.
Sweeten gradually. Stevia is concentrated, so add a few drops, taste, and adjust.
Store it airtight. This will keep in the fridge for about three days. Store in an airtight container, and add toppings right before serving.
