Ingredients

Chia Pudding

Toppings

  • 1 Tablespoon unsweetened coconut flakes
  • handful of mixed berries

Instructions

  • Mix the almond milk, chia seeds, and matcha powder until there are no more lumps.
  • Add liquid stevia drops a little at a time to taste.
  • Cover and allow the chia seeds to expand for at least 1 hour. Or cover the bowl or transfer the chia pudding to an airtight container and allow the chia seeds to expand overnight.
  • Top with unsweetened coconut flakes and mixed berries right before serving.

Notes

Milk options: Unsweetened almond milk and lite coconut milk keep this low-carb. Full-fat coconut milk makes a richer, creamier pudding and will raise the calories and fat.
Matcha clumps: Whisk well, or shake everything in a sealed jar to break up any lumps.
Make ahead and storage: Store covered in the fridge for about 3 days.
Net carbs: About 3 grams net carbs per serving. The recipe makes 2 servings.
