Why Granny Smith apples work best

For baked apples you want a firm, tart apple that holds its shape in the oven. Granny Smith is my first choice for three reasons:

  • Firm texture – they hold their shape and do not break down during baking.
  • Less juicy – they won’t turn mushy the way softer apples can.
  • Tart flavor – the tartness balances the cinnamon sugar.

Other firm apples such as Pink Lady, Braeburn, and Honeycrisp work well too. You can use softer, sweeter apples like Gala or Red Delicious, but reduce the sugar slightly and add an extra squeeze of lemon juice to bring back some tartness.

How to Make Baked Cinnamon Apples

  1. Peel the apples, then drop them into a bowl of lemon water to prevent oxidation.
  2. Coat each apple in melted butter, then give them a generous dusting of cinnamon sugar. Do not worry about covering every spot, because you will baste the apples in their own cinnamon syrup once they bake. As they cook, the apples release their juices and form a cinnamon glaze at the bottom of the dish. Spoon that glaze back over the apples before serving. It carries the most apple flavor.

Ingredients 

  • 6 small Granny Smith apples
  • 1 tablespoon lemon juice, optional
  • ¼ cup sugar
  • tablespoons butter, melted
  • 1 tablespoon cinnamon
  • 1 cup vanilla custard sauce, to serve; optional

Instructions 

  • Preheat oven to 350 degrees F.
  • Peel each apple and place it in a bowl of water. Add lemon juice to the water to help prevent browning if you like. Let them sit for 5 to 10 minutes while you peel the rest and gather the other ingredients.

  • Mix the cinnamon and sugar together in a small bowl. Coat each apple completely with melted butter, then sprinkle the cinnamon sugar over the top.
    ¼ cup sugar, 1 tablespoon cinnamon, 2½ tablespoons butter
  • Place the apples in a baking dish and cover with foil. Bake for 45 minutes to 1 hour, or until the apples are fork-tender. Remove the foil and bake for 5 minutes, or until the apples start to brown and a cinnamon-sugar glaze forms at the bottom of the dish.
  • Baste the apples with the glaze and serve immediately with vanilla sauce.
