- 2 6oz salmon fillets
- 1 Tablespoon avocado oil
- 1 Tablespoon brown sugar
- 1½ teaspoons ancho chili powder
- 1 teaspoon cumin
- 1 teaspoon smoked paprika
- ⅛ teaspoon cayenne powder

Preheat your oven to 425 degrees F.
In a small bowl, combine brown sugar, ancho chili powder, cumin, smoked paprika, cayenne, and salt & pepper.

Pat the salmon fillets dry with a paper towel. Coat them with oil, then press the spice rub onto each fillet so it sticks.

Bake the salmon for 6 to 8 minutes for thin fillets, or 10 to 12 minutes for thicker pieces, until it reaches 125°F to 135°F in the thickest part and flakes easily with a fork.
