P.F. Chang's Inspired Chicken Lettuce Wraps
Ground chicken, fresh shiitake, and water chestnuts in a hoisin, soy, and black vinegar sauce, served in butter lettuce cups. Ready in 20 minutes.

- 1 lb ground chicken
- 1 Tablespoon vegetable oil
- 1 head lettuce butter, bibb, or iceberg
- 1 teaspoon sesame seeds for garnish
- cilantro leaves for garnish
Vegetables
- ½ large onion diced
- ½ cup fresh shiitake mushrooms diced with stems removed, about 4 - 5
- 1 8oz can of water chestnuts drained and chopped
- 2 scallions chopped, white and green parts separated
- 1 jalapenos minced (optional for spice)
Mix all the sauce ingredients in a bowl and set aside.
Heat 1 tablespoon oil in a large pan over high heat. Add the chicken and cook for 4 to 5 minutes, breaking it into small pieces, until almost cooked through.
Add the onion, mushrooms, scallion whites, and jalapeño. Stir-fry for 1 to 2 minutes.
Add the water chestnuts and sauce. Stir-fry for 4 to 5 minutes, until the chicken is cooked through.
Stir in the scallion greens and turn off the heat.
Garnish with sesame seeds and cilantro. Serve in lettuce cups.
Lettuce: Butter, Bibb, and Boston are all butterhead varieties. Iceberg also works.
Substitutions: Any ground meat works, including pork, turkey, or beef. Bean sprouts or bamboo shoots can replace the water chestnuts.
Spice level: The jalapeño and chili garlic sauce are both optional. Use either, both, or neither.
Make ahead: The filling keeps for up to 3 days. Reheat before serving.
Storage: Refrigerate leftovers in an airtight container for up to 3 days.
