- 6 eggs large, room temperature
- ¼ cup mayo
- 1 teaspoon vinegar
- 1 teaspoon Dijon mustard
- ⅛ teaspoon garlic powder
- smoked paprika for garnish
- parsley chopped for garnish
- salt & pepper to taste
Boiling the Eggs
Fill a pot with enough water to cover the eggs and bring it to a boil over high heat.
Add the eggs to the boiling water in a single layer and boil for 10 minutes.
Peel one egg to check doneness. If the yolks need more time, boil the rest for 1 to 2 more minutes.
Remove the shells under cold running water and place them on a paper towel.
Assemble the Filling
Slice the eggs in half and carefully scoop out the yolks into a small bowl.
Add the mayo, vinegar, Dijon, and garlic powder. Mash with a fork until smooth, then season with salt and pepper. For a smoother texture, use a hand mixer or food processor.
Mayo substitutes: Use the same amount of avocado, Greek or French yogurt, or sour cream. For vegetable oil, start with 2 tablespoons and add more as needed.
Toppings: Bacon bits, chives, avocado, blue cheese or feta, smoked salmon, olives, radish, tomatoes, or relish.
Make ahead: Make the day before and keep chilled until serving.
Storage: Store in an airtight container in the fridge for up to 2 days.
