This easy sweet corn soup is creamy, luscious & velvety smooth. It's requires just five ingredients and it's ready in just 15 minutes from start to finish!

Ingredients

  • 1⅔ cups corn kernels or 3 large ears of corn
  • 2 ¼ cups filtered water
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • ½ teaspoon pepper

Corn Topping

  • cup corn kernels
  • ¼ cup chopped fresh parsley
  • 1 teaspoon vegetable oil

Instructions

  • Corn topping: Saute the corn kernels with vegetable oil until soft and tender. Add chopped fresh parsley and season with salt and pepper. Set it aside.

  • Add the remaining corn kernels, water, garlic powder, salt, and pepper to a high-speed blender and blend until it's completely smooth and creamy, about 2 - 3 minutes. Transfer it to a pot and bring to a boil.
    1⅔ cups corn kernels, 2 ¼ cups filtered water, 1 teaspoon garlic powder, 1 teaspoon salt, ½ teaspoon pepper
  • Serve with sauteed corn and herb mixture.

Notes

  • If desired, substitute vegetable broth for water
  • Storage: store in an airtight container in the fridge for up to 3 days or 1 month in the freezer.
