Ingredients

  • 1 large english cucumber sliced about 1/3" inch thick
  • 1 ½ cups hummus roughly 10 oz container
  • ¾ cup cherry tomatoes quartered
  • chopped parsley to garnish

Instructions

  • Arrange the cucumber slices on a plate or serving platter.
  • Top each slice with about 1 tablespoon of hummus.
  • Add a slice of yellow tomato (if using), then a quartered red cherry tomato. Garnish with chopped parsley.
  • Serve right away, or cover tightly with plastic wrap (or store in an airtight container) and refrigerate. Serve cold the next day.

Notes

  • Make ahead: Assemble up to a day ahead. Building them right on the serving platter lets you go straight from the fridge to the table.
  • Keeping them cold: For outdoor parties, set the platter on a tray filled with ice.
  • Skewer option: Thread cucumber slices and cherry tomatoes onto wooden skewers and serve the hummus on the side.
  • Lower-carb swaps: Use guacamole or cream cheese in place of hummus.
  • More toppings: Sun-dried tomatoes, artichoke hearts, or kalamata olives.
  • Gluten-free: Naturally gluten-free; check the hummus label to be sure.
