Strawberry syrup
- 1¼ cups strawberries fresh or frozen
- ¼ cup fresh strawberries diced to 1 cm pieces
- ¼ cup sugar
To assemble
- 2 cups milk see Notes for options
- ½ cup fresh strawberries diced to 1 cm pieces
- whipped cream optional
Puree: Blend the fresh or frozen strawberries until smooth using a blender, food processor, or masher. If using frozen strawberries, thaw them a bit in the microwave or use a high-speed blender.
1¼ cups strawberries
Cook the syrup: In a small pot, combine the strawberry puree, sugar, and diced strawberries. Bring to a boil, boil for 1 minute, then turn off the heat. Chill in the fridge until cold.
¼ cup sugar, ¼ cup fresh strawberries
Assemble: Portion the remaining diced strawberries into each glass, then pour the strawberry syrup into each glass, swirling it up the sides. Gently pour 1 cup cold milk into each glass.
½ cup fresh strawberries, 2 cups milk
Serve: Stir before drinking and serve immediately. Top with whipped cream if you like.

No-cook option: You can skip the boil. The puree will be thinner and more watery, with a fresher strawberry flavor; use it the same day.
Milk: Any milk works, but for the closest Korean cafe version, use full-fat dairy milk. For non-dairy options, choose a thicker milk like oat, soy, cashew, hemp, or lite coconut milk.
Foamy top: Froth the milk before pouring for a cafe-style strawberry latte.
Make ahead: The cooked syrup keeps up to 2 days in an airtight container in the fridge.
Serve right away: Once the syrup, strawberry pieces, and milk are combined, serve immediately.
Frozen strawberries: Use them for the syrup only; the diced pieces in the glass should be fresh.
