- 1 lb ground beef
- ¼ cup white onion chopped
- 1 Tablespoon avocado oil
- 2 stalks scallions chopped
- 2 cups sesame broccoli or plain steamed broccoli
- kimchi to serve on the side, optional
- sesame seeds for garnish
- steamed rice
Mix all the sauce ingredients in a small bowl and set it aside.
Heat the oil in a pan over high heat. Add the ground beef and break it apart into small pieces as it cooks.
When the beef is almost cooked through, add the chopped onion and the sauce. Stir fry until the beef is fully cooked, about 2 to 3 minutes.
Turn off the heat and stir in the chopped scallions.
Serve the Korean beef over steamed rice with sesame broccoli and kimchi. Garnish with sesame seeds and serve immediately.
- Spicy version: Add gochujang and Korean red pepper flakes to the sauce. Gochujang is a sweet and spicy Korean red pepper paste, so if you use more than 1 Tablespoon, reduce the brown sugar by a third.
- Lower carb: Serve over cauliflower rice, spring mix, or lettuce. Leave out the brown sugar and use liquid stevia if you want sweetness.
- Meal prep: Divide the rice and Korean beef among 4 containers, with the broccoli on the side.
- Storage: Refrigerate for up to 4 days or freeze for up to 1 month.
- Reheating: Microwave on high for about 2 minutes from the fridge, or 3 to 4 minutes from frozen, until heated through.
