Ingredients

  • 2 pieces wild salmon 5 - 7oz, each
  • 2 cups sugar snap peas
  • 1 stalk scallions chopped
  • sesame seeds for garnish
  • 2 cups steamed white rice
  • salt & pepper to taste

Teriyaki Marinade

Instructions

  • Preheat your oven to 425 degrees F.
  • Combine the teriyaki marinade ingredients in a small bowl and pour ⅔ of it into a ziplock bag along with the salmon. Reserve ⅓ for the glaze. Let the salmon marinate for 10 minutes while you prepare the other ingredients.
  • While the salmon is marinating, saute the sugar snap peas in a hot pan for 5 minutes. Turn off the heat and stir in the chopped scallions. Season with salt & pepper to taste.
  • Remove the salmon from the marinade and pat dry. Place them on a pan lined with parchment paper and bake for about 5 minutes. Brush the remaining ⅓ marinade on top of the salmon and let it bake for 2 - 3 more minutes until desired doneness.
  • Serve the salmon with steamed rice and sugar snap peas. Garnish with sesame seeds.

Notes

  • You can marinate the salmon in advance for up to a full day in the refrigerator.
