Lobster Rolls - Two Ways
Learn how to make two types of New England lobster rolls, known as Maine and Connecticut. A Maine lobster roll is lightly dressed with a mayo-based dressing whereas a Connecticut lobster roll is coated with just plain melted butter. Each preparation has a light touch to let the lobster flavor shine through and is delicious in its own way!

Substitute with clarified butter or brown butter for a richer flavor.
Note: If using a whole lobster, expect a yield of 20% of its weight for lobster meat.
Recipe Tips & Variations:
- Use brioche split-top buns for a richer flavor.
- Leave the claw meat whole and place it on top for presentation.
- I recommend Butter, Bibb, or Boston lettuce for its mild flavor.
- For a generous serving, aim for 4oz of lobster meat per roll.
